Dale’s Mayonnaise

Dale’s Mayonnaise
2 egg yolks
1 teaspoon fine salt
1/2 teaspoon dry mustard
2 tsp sugar equivalent
5 teaspoons fresh squeezed lemon juice
1 1/8 cup macadamia or avocado oil or mix of both
Add in dried parsley & chives, 1/8 tsp chipotle, 1/2 tsp garlic, 1/2 tsp worcestershire, 1/8 cup parmesan.
2 pieces of middle rasher bacon. Bake the rind till crisp and blitz, then add to the mayonnaise.
