Mexican Turkey Frittatas

20oz extra lean ground turkey breast
1/2 diced onion
1 tbsp homemade taco seasoning (or to taste)
2 tsp olive oil
1 diced red pepper
2 cups diced mushrooms
1 tbsp chipotle peppers in adobo sauce, finely chopped
8 eggs
1/4 cup milk
1/3 cup chopped fresh cilantro
1 cup lowfat shredded Mexican blend cheese
1/3 cup green onion

Brown turkey and onion over medium-high heat for 10-15min. Preheat oven to 350°F. Once turkey is cooked, drain and sprinkle with taco seasoning. Set aside. In another pan, heat 2 tsp olive oil on medium heat. Add diced red bell pepper and diced mushrooms. Add the chipotle pepper and cook for approximately 5 minutes until mixture softens. Meanwhile, whisk 8 eggs with milk, cilantro, salt and pepper. Add turkey, pepper mixture, cheese and green onion to egg mixture. Stir well until combined. Spray muffin tin well with nonstick spray and fill each cup 3/4 full (abt 1/3 cup of mix). Cook 20-25 minutes or until egg sets.
