1/2 diced onion
1 tbsp homemade taco seasoning (or to taste)

2 cups diced mushrooms
1 tbsp chipotle peppers in adobo sauce, finely chopped
8 eggs

1/3 cup chopped fresh cilantro
1 cup lowfat shredded Mexican blend cheese

Brown turkey and onion over medium-high heat for 10-15min. Preheat oven to 350°F. Once turkey is cooked, drain and sprinkle with taco seasoning. Set aside. In another pan, heat 2 tsp olive oil on medium heat. Add diced red bell pepper and diced mushrooms. Add the chipotle pepper and cook for approximately 5 minutes until mixture softens. Meanwhile, whisk 8 eggs with milk, cilantro, salt and pepper. Add turkey, pepper mixture, cheese and green onion to egg mixture. Stir well until combined.
