This is set up for maintenance, so you may need to change the macros for your meal. I had it for 5 meals, but making it 6 should bring it closer.
Dale’s Sweet Chicken Curry
50g butter, melted
1/4 cup dried onion
2 grated carrots
1 cup broccolini
1 tbl Dijon mustard
2 tsp sea salt
1 level tsp mild curry powder
1/4 cup sweetener equivalent
1 kg chicken breast pieces, chopped into small nugget sizes
1 small can Coconut Cream
1 bunch each Italian parsley and chives
1/2 very small onion to thicken the sauce
1. Whisk all sauce ingredients together.
2. Add chicken pieces to slow cooker, pour sauce over top, and stir so all the pieces are coated.
3. Cook in slow cooker overnight.
4. Simmer sauce on high for 30 mins in slow cooker. Put chicken aside and add sauce before freezing.
White Sauce onion based with cream
A light onion puree makes a good base for a lot of white sauce recipes.
Place 1 large chopped onion, 150mL of water, 250mL cream in a saucepan – bring to the boil and simmer for 15 minutes. Blitz with a hand blender and then allow to cook on a low heat until it’s the consistency you’re after.
If you were making a cheese sauce, once your creamy sauce is at a nice consistency, add in cheese to taste.
