Dale’s Chicken Omelette
2 eggs + 1 white (1/4 cup)
2 tbl water
3/4 tsp salt
3/4 tsp dehydrated bone broth or bouillon cube (optional)
1/4 tsp chipotle chilli powder
1/4 cup chopped fresh chives
1/2 cup chopped fresh flat leaf parsley
65–75g cooked chicken breast, chopped
20g cheese (I use slices, chopped that are exact)
Mix all together.
Heat frypan with a good spray of XV olive oil. Pour in mixture and keep pulling away from the sides and allow the liquid to drop underneath. When the base is set I pop under the broiler to set the top. Fold over and thoroughly enjoy.
If you have the macros, 1 tsp cream is nice as is 2 3″ spring onions. I eat mine with 100g fresh mushrooms and 150g raw spinach.
