Slow Cooker Jamaican Jerk Chicken
7 oz raw weight chicken = 1 serving
Macros: 45 g P/ 5 g F/ 2 g C
5 lbs. chicken
2 T Jamaican jerk seasoning (I bought mine at HEB [local Texas grocery store] in the healthy living section)
¼ cup coconut aminos
1 T lime juice
1 squirt of liquid Stevia
100g chopped white onion
1 chopped jalapeno
1 T bouillon powder
In a food processor combine onion, jalapeno, lime juice, jerk seasoning, stevia, bouillon powder
Put the chicken in a large bowl, pour the blended seasoning over the chicken and cover – let marinate in fridge for at least 3 hours or overnight.
Transfer chicken and marinade to slow cooker, cover, and cook on high for 3 hours
