1/2 cup shredded Italian cheese
1 teaspoon dried oregano
1/4 cup fresh basil leaves (finely chopped)
1 teaspoon onion powder
2 tablespoons butter (melted)
4 chicken thighs (bone-in, skin removed)
red pepper flakes (to taste)
Preheat the oven to 375F.
Mix together the cheese, herbs, onion powder, chilli flakes and black pepper.
Place the melted butter onto a plate. Dip a chicken thigh into the butter, then into the cheese mixture. Place in a baking dish.
Repeat with the remaining chicken thighs. Press any remaining cheese mixture on top of the chicken.
Cover and bake for 45 minutes or until chicken has reached internal temperature of 165F. Remove cover for last 5-10 minutes of cooking time.
Personally, I’d also top with mushrooms & spinach that I’d sauteed in butter & garlic.
