Erin’s Slow Cooker Cilantro Lime Shredded Chicken


Erin’s Cilantro lime shredded chicken

Makes 10 servings

2 (3.5 gram) chicken bouillon cubes
4 oz hot water
36.6 oz boneless skinless chicken thighs
26 oz boneless skinless chicken breasts
1 tsp ground turmeric
1 Tbsp salt
3.5 oz avocado (soft enough to puree)
1/2 oz fresh garlic
2 oz “Bruschetta” sun dried tomato and evoo
1/2 oz coconut vinegar
1/2 oz MCT coconut oil
2 oz lime juice
.10(1/10) oz fresh cilantro

Take the two chicken bouillon cubes and dissolve in 4 ounces of hot water and place in bottom of large slow cooker. Add chicken , salt and turmeric.

In a small bowl combine remaining ingredients. Use either an immersion blender , a food processor or a fork for more chunky sauce. Pour sauce over chicken in slow cooker. Set too low heat and cook for 6 to 8 hours. Stir and shred before serving.
