Dale’s Marinade for chicken, pork, beef
1/3 cup avocado oil (or something mild like macadamia)
1 1/2 cups bone broth
4 tsp lime juice
3 tsp smoked salt
2 tsp smoked garlic
1 tsp Cholula hot sauce
1 tsp chipotle chilli powder
1 tsp smoked paprika
4 tsp smoked onion flakes
1/2 cup chopped fresh parsley
8 tsp (2 Aust tbl) Ranchero Chipotle Salsa (or something similar)
1/4 tsp liquid smoke (I used apple)
I mixed it all in a 2 cup (500ml) pyrex measuring cup. Pounded the chicken, popped it into two zip lock bags with 1/4 of mix in each bag. Seal up and pop into fridge. Turn every hour.
The remaining 1 cup can be reduced in a saucepan and divided over the two meals.
