Chicken, feta and spinach meatballs
Macros and recipe in photo.
Sauté spinach in olive oil then, when it cools, squeeze out all moisture. I used a mesh strainer.
Chop up spinach to avoid large pieces. Mix meatballs and either pan fry or back at 350 for about 35 minutes. Time may need adjusting.
Also, may need more parmesan and definitely needed salt. Otherwise, super yummy
