Cauliflower Tacos: About 8ounces of cauliflower makes two tacos. You can buy Cauliflower Rice prechopped at Trader Joe’s.
8 ounces of Cauliflower Rice (before cooking)
Steam cauliflower rice until done (i steamed about 8 minutes)
Take a towel and squeeze all the water out of the cauliflower. It is hot so be careful. You will have to squeeze it many many times. If you do not get the water out, you will have runny shells.
Mix with the cooked cauliflower:
1tsp of paprika
1 tbsp of cilantro or to your preference taste
1 tsp of parsley
Salt & Pepper to taste
Make into two balls, flatten them on a non stick pan.
Bake for 10 minutes at 375. Flip them and back for another 10 minutes (or till they are brown to your liking).
If you do not bake them long enough they will be gooey.
For me this was 37P/17F/11C macros because I cooked chicken and topped with cilantro and onions.
