Avocado Egg Salad


Avocado Egg salad (no mayo)
I personally would eat half of this with some other protein to hit the 40g. It’s like a delicious side dish

6 eggs
150g avocado
1 tbsp lemon juice
1 tsp red wine vinegar
1/2 tsp salt
1/2 jalapeno, deseeded and chopped
1/4 c. red onion, chopped
chives (optional, to top)

Hard-boil the eggs and roughly chop. Mash avocado and combine with the rest of the ingredients. Serve with chives on top (optional).
